chop up a decent amount of potatoes, into around 1cm cubes. i usually end up doing around 1kg, but it depends on how much fits on your pan
fry them in oil for around 30 mins, turning them around so everything is well fried. put a bunch of paprika and maybe chili oil on the potatoes, to taste. don't put any salt at this step, it'll make the potatoes soggy. you can put the salt when they're done frying. technically you should simmer them, but i like them fried, it gives the final tortilla a more interesting texture.
on a separate pan, fry a big onion that has been chopped really finely until it's golden brown
in a big bowl, put 10 medium eggs with some salt, spices & herbs (paprika, basil, rosemary, oregano, etc). whisk the eggs.
once the potatoes and onions are done, let them cool down a little bit, and put them in the eggs. make sure to drain the oil out of the potatoes (you don't want too much oil in the final mixture), and salt them now. stir this mixture thoroughly.
pour the mixture in a heated pan with a little bit of olive oil, and fry for around 4 minutes. once the sides start looking cooked, get a plate as big as the pan and use it to turn the tortilla around. it's kind of scary if you've never done it before: the tortilla is big and heavy. you just need confidence, do it in a single move. some of the tortilla might spill out, so do it over a surface you can easily clean, rather than the hob. you have to flip the tortilla onto the plate, then slide the tortilla back into the pan. fry for 2-3 more minutes.
ideally, you want to leave the center a tiny bit undercooked, so it remains runny. getting the timing right will depend on your hobs, you'll have to try it a few times.
flip the tortilla back into a plate is the easiest way to remove it from the pan.
